Salmon Scampi and Rice

"Chunks of tender salmon fillet and green beans with a scrumptious herb and butter rice are geared up to serve in just 30 minutes."

Ingredients :

  • 1 pound skinless salmon fillet, reduce into 2-inch chunks
  • 2 tablespoons I Can't Believe It's Not Butter!® Spread, divided
  • 10 oz thin green beans, reduce into 2-inch pieces
  • three cloves garlic, finely chopped
  • 1 (5.4 ounce) package Knorr® Rice Sides™ - Herb & Butter
  • 2 tablespoons chopped sparkling parsley leaves
  • 1 tablespoon clean lemon juice

Instructions :

Prep : 10M Cook : 4M Ready in : 30M
  • Season salmon, if desired, with salt and pepper. Melt 1 tablespoon Spread in huge nonstick skillet over medium-high warmth and cook salmon, turning every so often, until salmon flakes with a fork, about 5 minutes. Remove and set aside.
  • Melt closing 1 tablespoon Spread in same skillet over medium-high heat and cook green beans and garlic, stirring every so often, till aromatic, about 2 mins.
  • Prepare Knorr(R) Rice Sides(TM) - Herb & Butter in equal skillet in line with package instructions. Stir in parsley, lemon juice and salmon. Serve, if desired, with lemon wedges.
